Catching Up...Big time!

The past few weeks have been a whirlwind! It was crunch time with my thesis, hence, the nonexistent posts. Luckily, I PASSED my defense yesterday!!! :) It went extremely well. I actually got to sit down and give my presentation because of the shape of the room and I didn't get hammered with questions I didn't know. It was kind of anticlimactic, but I guess that's a good thing? I finished making a few tiny revisions that my committee suggested today, so once my advisor says it looks good then I can submit it to the graduate school! Woo hoo! :)

This past weekend I went apartment hunting with my Dad in Northern Virginia. I was looking in Fairfax, Tyson's Corner, and Vienna and ended up signing a lease for an apartment in Fairfax that is literally .4 miles from work! The apartment hunt was carazyyy. The apartments in the range I wanted to spend were sketch and the apartments I loved were wayyyyyy over my budget (think mortgage payment). Luckily, I only had to go a little over what I wanted to spend to get a nice apartment...after lots and lots of searching! The apartment/townhouse community is really cute and looks like a neighborhood and has lots of trees. I'm hoping to walk to work, until it gets dark early, to save $$ on gas!

Obviously, I have cooked a few things between the last post and now...so let's play catch up! I won't post everything today, so check back this week for more! Before the bf left for Tulsa, I made him a farewell dinner that included...wait for it...chicken! Here's the recipe for the chicken...sorry but I didn't really measure.

Ingredients
-Butter
-White wine
-Chicken (fingers or thinly sliced)
-onions (vidalia)
-mushrooms (baby bella are my fave!)

Marinade
-1/4 cup EVOO
-1/4 cup balsamic vinegar
-garlic
-basil
-oregano
-lemon pepper
-lemon

Directions:
Marinate the chicken in a bag filled with the marinade for 30 min-2 hours. Bake the chicken until it's almost done cooking (say 5 min left). While chicken is baking in the oven, saute onions in butter. Once they almost turn translucent, add the chopped baby bella mushrooms. After they have sauteed for a bit, add white wine and a lot of butter. I never said this was a healthy dish. ;) At this point, the chicken should be done, so add it to the pan and cover it for about 5 minutes until it's done!

We had a garden salad and sweet potato fries. Normally, I would have told the boy that those don't go well with the main course, but because it was his last night...I said I'd make anything. :)

It smelled amazing...



 The mushrooms were the best part of the dish!
 Dip your sweet potato fries in BBQ sauce (preferably Sweet Baby Ray's), you will thank me later
