Friday is here at last
One of my favorite things about Friday is that I typically don't have to go on campus. Although my day is filled with studying and catching up on e-mails, it's a nice change of pace. Somehow I was able to drag myself out of bed this morning and hit the gym! I'm slowly working back into my gym routine...hopefully in the next few weeks I'll be able to run for 30 minutes straight without looking like I'm about to pass out haha.
For breakfast this morning I tried to create my own version of strawberries and cream oatmeal!
I used:
-1 cup steel cut oats
-4 cups water (to cook the oats)
Per serving, I added:
-a handful of frozen strawberries (defrost and drain excess water before adding to oatmeal)
-1 tsp of flax seeds
-splash of cream
-1 tsp of raw agave nectar (add more to taste)
I must say that I'm pretty pleased with this concoction. It's definitely not as good as the original strawberries and cream oatmeal, but this version is healthier because it's not processed and there are no trans fats!
One of my favorite recipes I have is for the salad dressing my Dad makes. I was trying to finish up veggies in my fridge today so I whipped up some of this homemade dressing! This recipe is very easy to change according to taste and still turns out well.
-1/2 cup olive oil
-3 Tb of balsamic vinegar
-1/2 tsp dried oregano
-1/4 tsp lemon pepper or lemon juice
-1/4 tsp sugar
-1/4 tsp pepper
-1 tsp salt
-1 tsp mustard
-1 tsp water
Not sure what's on the menu for dinner, but I'm looking forward to a night without school work to do!
