I'm slacking...
Well, I made dinner this weekend but got so wrapped up in making it that I forgot to take a picture. Saturday night I made tilapia, green beans, and quinoa. I made it all up and didn't measure anything but below you'll find the "rough measurements" of the ingredients I used.
Tilapia (4 fillets)
-I put it in a baking dish and drizzled some leftover dressing (see previous post) I made over the top
-I sprinkled some lemon pepper and lemon juice on the fish as well
-It took about 30 minutes on 375 to bake
Green Beans
-Coated the bottom with a little olive oil
-Chopped up 3 shallots and sprinkled them over the green beans
-Added a few tabs of butter (this was not my doing haha)
-It took about 30 minutes on 375 to bake
I cooked the quinoa in vegetable broth. Since I wasn't adding any veggies to the quinoa, I wanted to give it more flavor. It is such a great grain-like side that is packed with more protein than your typical carb side dish. If you haven't had it before, I'd describe the texture as a mix between rice and couscous.
Hopefully I'll find some time this weekend to make a new recipe, but for now school and studying to re-take the GRE have consumed all of my time. It looks like I might be having salads for the rest of the week!
