Happy New Year!
Happy New Year everyone! I hope you all had a fun and safe new year's eve. We spent new year's eve/day with friends in Winchester. Lots of good food and good company! I think I definitely O.D.'d on dip. There was my favorite Velveeta dip and this other cheesy dip. So. Good. Today was the first day I spent more than 2 hours at my place since before I went to Boston. With a little time on my hands, I decided to break in my Vitamix! I made a strawberry banana smoothie and garlic hummus!
Strawberry Banana Smoothie
Ingredients
-2/3 cup Strawberries
-1 banana
-1 container of strawberry banana greek yogurt
Directions
Place all ingredients in blender and mix until smooth. Works best with frozen fruit!
I decided to make some garlic hummus to bring over to the bf's for the Cowboys/Eagles game.
Garlic Hummus
Ingredients
-2 cans garbanzo beans
-1 hefty scoop of tahini
-5ish cloves of garlic
-salt, pepper, paprika to taste
-garbanzo bean juice
-olive oil
Directions
Drain beans and save some of the juice to thin the hummus later. Place beans, tahini, garlic (used garlic press), and a splash of olive oil in the Vitamix and blended until smooth. If it's too thick, add some leftover bean juice to thin it out. After the hummus is finished processing in the blender, pour into a glass bowl and then add salt, pepper, and paprika to taste. If it's not garlic-y enough, you can add a dash of garlic powder. Place hummus in air tight container and store in the refrigerator. I added a drizzle of olive oil and sprinkled paprika on the hummus before I ate it as well.
It's been very overcast today so there wasn't a lot of natural lighting! I'm off to "watch" the game. Have a great night!
