Baked Spaghetti Dish
Hey Everyone! Sorry I've been MIA lately! Between midterms and traveling home, I have needed a break to relax
I meant to post this recipe last week…better late than never, right? I was trying to use up what I had in the pantry without buying a lot of fresh produce at the grocery store last week. I didn’t want to waste money on food that would spoil while I was at home over spring break. So…this baked spaghetti recipe was created!
Baked Spaghetti with Chicken and Kale
Ingredients
-2 chicken breasts
-1-2 cups kale
-1 box whole wheat spaghetti noodles
-1 jar marinara
-1 container grape tomatoes
-1-2 cans of diced tomatoes
-cheese
-lemon pepper
-olive oil
-pepper
Directions
Saute chicken breast in olive oil, lemon pepper, and pepper until cooked. Add grape tomatoes and saute for a few minutes. Once the tomatoes soften, add the marinara, diced tomatoes, and kale. Once this comes to a boil, turn to low heat until the pasta is boiled and drained. You can either layer the sauce and noodles or mix it all together in the pot and pour it in a baking dish. Top with any shredded cheese! Bake in the oven on 350 degrees until the cheese is melted.
I’m off to finish my taxes and enjoy the beautiful day! Check back tomorrow for another post!
