Tuesday Catch Up
Hey everyone! Sorry I never followed up with a post yesterday. I was either out of the house or with people at all hours of the day yesterday. Here are some of the highlights!
Yesterday, I started the day by catching up on e-mails and searching/applying for jobs. I ate a quick bite of lunch before I headed off to Starbucks to grab coffee with a friend.
Yesterday’s lunch was leftovers from dinner (israeli couscous with mushrooms, carrots, red peppers, and spices) on a wheat tortilla and pepper jack cheese melted over top! I also had a side of blueberry greek yogurt. This is one of the smaller containers and it was the perfect amount!
After coffee, I FINALLY went to The Skinny Dip for frozen yogurt with my brother. I should have taken a picture because my bowl was massive. Strawberry & chocolate ice cream with oreo pieces, cookie crisp cereal, strawberries, and hot fudge. To.Die.For.
Last night for dinner we had ravioli, salad, and garlic bread! As an FYI, my Mom gets all the credit for all the amazing meals that I've had at home. I've only helped :)
The tomato sauce was a mixture of onions and mushrooms sautéed in olive oil, crushed tomatoes with basil and herbs, tomato paste, garlic, and a few other dried herbs (oregano, basil, etc.).

Dessert!
This is a recipe my Mom said she had at a Pampered Chef party years ago! It’s basically crescent roll dough laid out on a pizza stone, with a cream cheese, powdered sugar, vanilla extract, and egg mixture spread over top, cherry pie filling on top, fold dough pieces over, and bake! I’m sure you can google the real recipe.
It seriously tasted like a toaster strudel!!! But way better because it was home made
Today I’m going to work on a midterm I have and possibly look into applying for a few jobs. Later in the day I’m getting coffee with a teacher I had in high school then going to the Ash Wednesday service at church tonight.
