Yogurt Bowl

This morning I decided to trade out my usual warm breakfast for a cool breakfast because of the beautiful, spring-like weather. I’ve seen many bloggers rave about the so-called yogurt bowls, so I figured I’d give it a go!

Enter: Sweet Potato Yogurt Bowl

Ingredients
-1 container of 2% plain Chobani Greek yogurt
-1/2 cup pureed sweet potato
-1 banana
-1 T chia seeds
-1/4 cup granola

Directions
Mix yogurt, sweet potato puree, and chia seeds in a bowl and let sit in the fridge for about 30 min (so that the chia seeds can gel up). After 30 minutes, add sliced banana and granola!

I loved this combination! The sweet potato and banana slices balanced out the blandness of the plain yogurt. This would work just as well, if not better, if you used pureed pumpkin! FYI it’s still in stores even though it’s not Thanksgiving season Winking smile

I guess it’s time for an update on the Textbooks front. First off, my thesis…dun dun dun. Well, after a few months of trying to recruit participants, I think I might have to scrap the project and use another research project that I recently completed as my thesis. Most of this is due to individuals not meeting the criteria (sedentary behavior and no health restrictions), sharing lab space (time constraints), and many, many studies going on in our department (honor’s theses, master’s theses, and other projects). This has definitely been a HUGE lesson to me on patience and keeping a positive attitude. Sometimes things don’t work out the way you intended them to, but at the end of the day you just have to figure out a Plan B and roll with it!

That leads me to the next bit of news on the Textbooks front: I applied to 7 PHD programs, got rejected from 6, and waitlisted for 1. Whew! I’m hoping to hear from the school I’m waitlisted for between now and a little after April 15th (the APA deadline to accept/reject offers). In the mean time, I’m keeping my fingers, and legs, crossed and applying for jobs! While I really hope I get accepted into this program, I like the possibility of having more free time and working a job using the skills I’ve gained in my master’s program! As soon as I know anything, I’ll update you all. Smile

How do you stay calm when something didn’t turn out the way you planned?
Take a deep breath and repeat to myself, “there’s no use worrying about something you can’t control.” That helps most of the time!

Mango! Although, it doesn’t taste much different than peach.

  1. I used to eat yogurt bowls every morning for breakfast but they haven't been as appealing during winter. I have brought yogurt back into my life though with the making of some crazy addictive granola. I have a warm muffin for breakfast with coffee, then have the yogurt + granola and fruit as a mid-morning snack when I'm in the "comfort" of a warm office. :)

  2. I think that bowl may just contain some of my favorite foods!! and it looks tasty too!! Sweet potatoes are delicious with yogurt for sure.
    Great question about staying calm. I recently took up meditation which teaches that everything is impermanent and it has no weight because it will all pass. I hold a lot to that, knowing that whatever is happening in the moment will be gone soon.
    My favorite chobani is definitely plain because then I can mix things into it!!

  3. Elina- You made me crave another yogurt bowl as I read your comment! I think I hear a mango yogurt bowl calling my name :)

    mindrunningwild- Sweet potatoes and pumpkin are some of my favorite flavors to mix in oatmeal/yogurt! Peanut butter is also an amazing mix-in, especially with vanilla yogurt. I've heard meditation works wonders for staying calm, great idea!
